My Chickpea Fillets and my German Style Braised Cabbage go so well together. Perfect with Fried potato.

Chickpea Fillet
One of my favourite vegan meat recipes. These turn the humble chickpea into a lovely smooth pattie which when baked come out somewhere between a chicken fillet and a crunchy schnitzel.

Ingredients
- Tin Chickpeas Drained
- 2 tbsp Olive Oil
- ½ cup Gluten Flour
- ½ cup Cornflake Crumb
- ¼ cup Stock
- 2 tbsp Soy Sauce
- 2 Clove Garlic
- ½ tsp lemon zest
- ½ tsp thyme
- ¼ tsp paprika
- ½ tsp rosemary
- ½ tsp sage
Instructions
- Mash the Chickpeas and Oil together
- Add in all other ingredients and mix until combined and stringy.
- shape into fillet shapes, and put on to a baking sheet. Let sit for a while (at least 30 minutes) Put oven on to 190° C (375° F)
- Bake for 20 minutes, flip, and then bake for another 10-15 minutes

German style Braised Cabbage and Apple
A great side for anything fried, particularly Schnitzel

Ingredients
- ½ Cabbage Finely Chopped
- 2 Apple Peeled , Cored, Chopped into small pieces
- 1 Onion Finely diced
- ½ tsp Allspice
- ½ cup Apple Cider Vinegar
- ½ cup Water
Instructions
- Fry the Onion in a large saucepan with butter and Oil mix, then add the cabbage, Fry until tender
- once Tender add the Apple, and All spice. cook for 1 min
- add Vinegar and Water, reduce to medium low and let simmer for 1 hour
