Slow Cooker Lamb Massaman Curry

A curry perfect for winter, Simple to make and delicious to eat.

Equipment

  • Slow cooker

Ingredients

  • 1 Onion
  • 4 Potatoes Small, peeled and quartered
  • 2 Lamb Forequarter Chop
  • 1 tin Massaman curry paste
  • 200 ml Coconut Milk
  • 1 cup Frozen Peas

Instructions

  • Fry off the Onions and Potatoes until browned, add to Slow Cooker
  • Next Fry off the Lamb Chops, also until Browned, then add to the Slow Cooker
  • Add the Curry paste to the Frying pan that you used to fry off the vegetables and Lamb, add the coconut and stir until combined and starting to simmer, add to the Slow cooker
  • Cook as per Slow cooker instructions
  • Just before serving, add your frozen peas to the slow cooker and combine, let sit for 5 minutes
  • Serve

Butterscotch Pudding

Ingredients

  • 125 g Butter
  • cup Brown Sugar
  • 2 Eggs
  • 1 cup Self Raising Flour
  • 1 tsp Baking Powder
  • 1 pinch Salt
  • ½ cup Buttermilk (or add lemon juice to just under 1/2 a cup of milk)
  • 1 cup Caramel Topping

Instructions

  • Preheat oven to 180°C, grease a 1.5 L oven-proof dish
  • Beat together sugar and butter until creamy, light and fluffy
  • Add the eggs, slowly, then add vanilla, continue to beat until combined
  • Sift flour, baking powder and salt together into a separate bowl
  • Alternate adding the flour and buttermilk in batches until both added, beating continuously. make sure it is mixed well
  • Transfer to prepared dish and bake for 40 minutes
  • Once the cake is cooked, take out of oven, Add caramel topping to dish immediately. let sit for 5 minutes before serving
