Dad's Crepes

This is my Dad's recipe for crepes. He uses this for everything, sweet and savoury alike.
If he doesn't have enough Lettuce he will make these to contain the filling from San Choy Bao, but says that it goes very well with strawberries too.

Equipment

  • Frying Pan or Crepe Pan

Ingredients

  • 250 g Flour Sifted
  • 4 Eggs beaten
  • ½ tsp salt
  • 6 tsp butter melted
  • 500 ml Milk

Instructions

  • Add Sifted flour and salt to a bowl, making a well in the center
  • Stir in the eggs and butter to form a thick paste
  • slowly add the milk, whisking continuously to make a smooth batter
  • Rest the batter for an hour for best results
  • melt extra butter in hot frying pan or Crepe pan, and then add batter to pan, tilt the pan in a circular motion to make sure it coats evenly.
  • cook for two minutes, or until light golden underneath, flip and cook the other side.
  • Fill with any savoury or sweet filling you like
