Drug Cake (coconut caramel drizzle cake)
This cake got it's name from a friend being unable to control themselves around the cake. They eventually asked if there were drugs in the game, and the name was set.

Ingredients
Cake
- 1 cup milk
- ⅔ cup Caster sugar
- ½ tsp apple cider vinegar
- 2 tsp almond extract
- 1 tsp vanilla extract
- 1 ¾ cup all purpose flour
- ¼ cup corn flour
- 1 tsp baking powder
- 1 tsp bicarbonate of Soda
- ½ tsp salt
Coconut Caramel
- 800 ml coconut cream
- 1 cup brown sugar
- 4 tsp vanilla extract
- ¼ tsp salt
Instructions
Cake
- Preheat oven to 180°C, prepare a square baking tin (i just use baking paper)
- In a large bowl mix together Flour, Corn flour, baking powder, bicarbonate of soda and salt
- In a small bowl mix together the caster sugar, extracts, oil and milk
- Pour the wet ingredients into the dry ingredients and mix until mostly combined and there are no big clumps of flour
- Pour into cake tin and bake for 25 – 35 minutes (until sides are golden and toothpick comes out clean
Caramel Sauce
- To make the caramel, to a small saucepan add the coconut cream, brown sugar, vanilla extract and salt. Put the saucepan on a medium heat and stir so that all ingredients start to dissolve
- bring to a gentle boil for at least 15 minutes. it will start thickening up and become like a caramel sauce
- Let the cake cool for 15 minutes, then poke holes through the cake. then pour 1 and a half cups of caramel over the cake. also lift up the cake with a spatula to let the syrup in.Cover the cake and let it chill in the fridge for at least 2 hours. Serve cold with Cream and some of the left over sauce.
