Made this for a post election dinner. Lovely thick sauce with vegetables and sausage.

Sausage Casserole

Ingredients

  • 12 Sausages
  • 2 Leeks Sliced
  • 2 Carrots Chopped into chunks
  • 3 Sticks Celery Chopped into chunks
  • 6 Mushrooms Quarter
  • 8 leaves Sage
  • 1 tbsp Flour
  • 2 tbsp Tomato Paste
  • 1 cup Beef Stock

Instructions

  • Pre-heat oven to 180°C
  • Fry off Sausages in coverable oven friendly frying pan, until browned, remove from pan and cover
  • add the Leeks, Mushroom, Carrots and Celery to the Frying Pan, add flour to the vegetables and fry until all just golden brown.
  • Add Tomato paste and Beef stock to the vegetables and cook until sauce just starts to thicken. Transfer to Oven with lid and cook for 20 minutes, serve with Mashed Potato
