Orange and Passionfruit are excellent together, and luckily for me, my passionfruit vine has been putting out some great fruit, so lets make a cake!

Orange and Passionfruit Cake

A simple Orange and Passionfruit cake

Ingredients

Cake

  • 125 g butter
  • 175 g caster sugar
  • 2 eggs
  • 1 Orange (zested and juiced)
  • 225 g Self Raising Flour Sifted
  • 250 ml Milk

Icing

  • 2 Passionfruit
  • 30 g butter
  • 2 tsp Orange juice
  • 200 g Icing Sugar

Instructions

Cake

  • Pre-heat oven to 180°C, Grease and 20cm (8inch) spring form tin or loaf tin
  • Cream butter and sugar together until light and fluffy
  • Add eggs one at a time, beating continuously. Add orange zest
  • Alternate adding flour and milk in batches, beating on low speed continuously, until just combined
  • Pour batter into prepared tin, bake for 45 minutes or until skewer comes out clean. Leave to cool completely before Icing

Icing

  • Melt butter
  • Open passionfruit and put pulp through a sieve, leaving the juice
  • add juices to the butter and combine
  • slowly add icing sugar until the desired consistency is reached
    (I want a thick icing so I'll take it pretty far)
