Grilled Capsicum and Chevre Fritters

A different take on fritters, but nonetheless delicious

Ingredients

  • 2 capsicum chopped into 1-2 cm chunks, I used red capsicum
  • cup flour
  • ¾ tsp baking powder
  • 125 ml milk
  • 150g Chevre or other soft cheese
  • 2 tbsp oil for frying

Instructions

  • Grill the Capsicum chunks
  • Sift flour and baking powder into a large bowl, make a well in the centre
  • Whisk eggs and Milk together in a jug, add the Chevre and whisk more.
  • Add egg-cheese mixture to Flour and mix until smooth, Stir in capsicum, and add salt and pepper
  • Heat oil in fryingpan, then add 1/4 cup of batter to the fryingpan per fritter. cook for 2 minutes or until golden, then flip and cook for a further 1 – 2 minutes until cooked through. continue process until all the batter is used.
