Fancy Apple Pie

Also Known as Gallette des Rois or King Cake. This pie has an almond Pastry cream topped with sliced apple.

Ingredients

  • 2 sheets Puff Pastry thawed
  • 150 g Almond Meal
  • 75 g Sugar
  • pinch salt
  • 7 tbsp Butter very soft, plus extra for greasing
  • 1 egg
  • 1 apple unpeeled, cored, and finely sliced

Instructions

  • Line the bottom of a Cake tin (28 cm preferably) and grease the sides
  • combine the two sheets of puff pastry together and roll them into a ball, cut the ball in half and roll to fit the base of the tin
  • Roll out the other half into a rectangle, measuring 15 cm * 35 cm and cut in half lengthways. Line the sides with one of the strips, allowing an overlap where the base meets the sides. with the other strip run it around the corner of the tin where the overlap is (this will ensure your filling won't run out), Chill the tin for 30 minutes)
  • Beat together Sugar, Almond Meal, Salt, and butter until smooth, then mix in the egg. spread the mixture evently over the base then cover with the sliced apple
  • Place a baking tray in the oven, and pre heat to 200°C. Put the cake on the hot tray in the oven, and reduce heat to 180°C Bake for 45 minutes or until golden brown
